Cranberry Jello Salad ~ A Delicious but Neglected Holiday Dish

Have you ever lined up to be chosen for sides in a game, only to stand and wait and wonder until you’re the last chosen? Or maybe not chosen at all?

My husband is the creator of this culinary masterpiece, and we decided to take it to a church Christmas dinner one year. By the end of the evening, the serving spoon hadn’t even broken the surface of the jello.

But that wasn’t necessarily a bad thing.

More for us. We just took it home and munched on it for the next few days. J

I share this because I wonder if this dish wasn’t chosen by anyone because of the appearance. It’s not pretty, but it’s definitely delish, a mix of tart and sweet that zings your tongue and clears your palate.

{These photos are from a half-recipe.}

Ingredients:

1 can cranberry sauce
2 small boxes or 1 large box red jello – strawberry or cranberry
Orange juice
~ ½ cup finely chopped pecans
~ ½ cup finely chopped orange peel {Clean it first. J}




Directions:

Dissolve the gelatin in 2 cups of boiling water {like the first part of the directions on the box of jello}.

Chop in the cranberry sauce.


Add 2 cups of orange juice. {This is in place of the two cups of cold water in the box directions.}


Add pecans and orange peel. 


Chill.


As you can see from the photos, you might want to stir it before serving. The pecans and the orange peel float to the surface during gelling. J

On the other hand, if it’s neglected at a pot-luck…more for you to enjoy. J

  1. I usually have cranberry sauce left over (most of it) so this would be a great way to use it up and enjoy a lovely jello.

Too bad nobody took the plunge, as they most certainly would have been delighted. :) I have a similar recipe that uses crushed pineapple, rather than orange and fresh cranberries, rather than the sauce. We had friends join us for Thanksgiving last year, and this was one of the dishes they brought -- few ate it then, but I'd experienced the beauty of cranberry jello salad before & was not disappointed, especially when my friend offered me a large helping of the left overs! :D I also have a cooked cranberry sauce that is pretty much just fresh cranberries & orange juice with the daylights cooked out of it. An amazing accompaniment to turkey.
