Cake Mix Cookies ~ Fast & Easy Morsels of Goodness

Who can’t use an easy and tasty recipe, especially in the fall? J

Every once in a while, boxed cake mixes go on sale. The best sale I’ve seen is Meijer’s 10-for-$10-get-the-11th-free. It’s hard to pass up a price like that…except my family doesn’t like cake.

Add to that the fact that my family typically has a sweet treat on Sunday evenings, usually prepared by the girls, and I was dismayed at missing a bargain.

Everything came together when I found a recipe for cookies using a boxed cake mix. There are several versions floating around the web, and if you’re gluten free, you could probably use a gluten-free cake mix.


There are as many possibilities as there are cake mix flavors ~~

  • Chocolate cake mix cookies, perhaps with chocolate chips or nuts.
  • Yellow cake mix cookies with chocolate chips. To fancy them up, drizzle some almond bark across the top.
  • Lemon cake mix cookies with powdered sugar on top. {My favorite!}
  • Spice cake mix cookies with cream cheese frosting or two cookies in a sandwich. Perfect for autumnal goodness!

Here’s our recipe ~

Ingredients:
1 box cake mix
1 egg
¼ cup vegetable oil
¼ cup buttermilk or sour milk {Make sour milk by mixing ¼ tbsp. white vinegar with ¼ cup milk in a glass measuring cup. Then let it sit for five minutes.}

Directions:
Mix cake mix and oil in large mixing bowl.
Then use the measuring cup to put together the sour milk.
While the milk sours, add egg to the mix and oil. Stir well, approximately 50 strokes. It becomes quite stiff, so your stirring can work off the calories you’re about to consume when you eat the cookies. Just be careful of getting the chocolate chips out too early!


Add the sour milk. Stir well.


At this point, you can either ball cookies and place on a greased cookie sheet or spread the dough in a greased 9x13 pan for bar cookies.

Bake at 350 until golden. For bar cookies, this takes 12 to 15 minutes. For balled cookies, try 8 to 10 minutes.
