Need a Fast Thanksgiving Dessert? ~ Pumpkin Crunch

We’ll get back to the decluttering posts next week. But today, just in case you’re finding yourself in the middle of crunch time {hehe J} for the holiday, here’s a terrific recipe that you can whip up in just a few minutes.

This is a super easy and super yummy recipe that is casual enough for a snack or fancy enough for Thanksgiving dinner, especially with a scoop of Vanilla Bean ice cream or a dollop of whipped topping. It’s basically dump cake but with pumpkin pie filling as the bottom layer.

I start with the pumpkin pie filling, which I found on a can of pumpkin.

1-15oz. can pumpkin
2 eggs, slightly beaten
1 cup white or brown sugar (I prefer brown.)
½ teaspoon salt
½ teaspoon ginger
½ teaspoon nutmeg
2 teaspoons cinnamon
1 can (12 oz.) evaporated milk

Mix the ingredients in order given, although it’s easiest to beat the eggs first and then add everything else to that bowl.

Once that is mixed well, smooth it across the bottom of an ungreased 9x13.

On top of the pumpkin pie filling, sprinkle evenly a box of yellow cake mix. Cut two sticks of butter into about twelve pieces each, and layer those evenly across the yellow cake mix.

Bake at 350 for 40 to 45 minutes or until golden brown.
